Sometimes making good food can be a pain, but sometime making things from scratch(-ish) can turn out amazing. I'm armed with a fridge full of leftovers, and my intuition, let's make something awesome.

 

Recipe 1: Mozzarella Meatloaf Omelette

This morning, I felt in the mood for eggs, which is pretty unusual for me, I don’t make eggs for breakfast very often, and the eggs they serve at my school’s dining commons are never quite right. This morning, I decided I didn’t want to worry about clean up and took the liberty of using my little brother’s GT express, which is a little round auto baking machine:

 

 

          It has two little half moon depressions which make perfectly portioned whatevers, and cooks relatively quickly. Keep in mind that everything I did can be changed to suit a medium sized pan with no worries. 

          This Omelette was made from last night’s dinner, Meatloaf, and lunch the day before, chicken BBQ pizza. First Things first, I got all of my ingredients together: 

  • Four Large Eggs
  • A slice of leftover meatloaf, about an inch thick
  • 1/4 cup of mozzarella cheese
  • Non-Stick Cooking Spray

          First I cracked and beat the eggs in a small-ish bowl, you can add some milk to stretch the mix, I found that this recipe is enough for two people, without stretching in, you can also add some salt and pepper to taste, but I like to wait until after it’s cooked to add spices when adding leftover meats, because they already have their own spices added. Take your meatloaf and chop them roughly, they don’t have to be uniform or pretty, just smaller than bit-sized:

 

          Pour half of your eggs into your pre-greased pan, add meatloaf and top with cheese:

 

          Add remaining eggs and you’re all set!

 

          For me, all I had to do was close the lid and wait about five minutes for my eggs to be completely cooked, if you’re using a stove, cook over medium heat, and check for firmness and coloration, your eggs should have a slightly crisp gold-ish texture before you flip them. If you cook your eggs over a lower heat, they will firm before they turn golden, which is fine, if that how you prefer them; just make sure they’re cooked all the way through. My eggs ended up looking like this:

 

          I made some toast and put a little salt and ketchup on top of the eggs, and they were delicious. If I had to change anything, I think I would use less cheese, but other than that, they were amazing.

FOOD. Good food, easy food, food that you’ll love. MY main goal here is to take this whole thing one step beyond what those easy recipe shows do, they show you fast easy things that you could do with food you bought specifically for this purposes, I’m going to show you fast easy food you can make from leftovers, and your canned vegetable stockpile. 

There are a few things you’ll find about this blog that may or may not bug you, depending on the foodie you are, and there are a few things i do, that you might down right hate, but here’s a list, so that you can’t hold it against me:

  • Cooking is about Fun, Intuition, Creativity, and Individuality. I’m going to give you words like dash, or sprinkle, or a few shakes, and you can use those words how ever you want. Dealer’s choice, and i advise you to choose for your self.
  • I use a lot of Garlic, Tomatoes, Rice, Chicken, and Bottled Sauces to build off of. It’s easy, its cheap, and it means that i usually don’t have to worry about whether or not i have something.
  • GO WITH YOUR GUT, ALWAYS! If i say i started a soups with some spicy BBQ sauce, and some fried garlic, and you think this old recipe your grandma had for sauce tastes better or works better or whatever, use it, don’t ask me, use it, find your own way, and share your stories, i would love to hear them.
  • We are all amateurs here, regardless of whether you went to school or not, this is the blog of experiments, so do whatever you want, and try it how ever you would like, just be safe.
  • Finally, and most importantly I think, None of this has been approved by the FDA or the Health administration in anyway, I can’t help you there, take what i give you, and look at the labels and find it for your self, I don’t want complaints about bacon being fatty, use your own judgement if you think I’m using too much butter or oil or(occasionally) bacon grease.

This blog isn’t something preachy, it isn’t something I’m making to prove a point, It is all about fun, and food. That being said, a few simple tips I’ve learned just to make sure everything goes well, nobody accidentally squirts pepper juice in their eyes.

  • Wash your hands first, before touching anything, and after touching any raw meats, sea food, eggs or dairy.
  • Never consume anything raw, unless you know specifically how to prepare it(as in sashimi).
  • Make sure you clean your preparing surfaces, your table or counter or whatever, after you do any cooking, hot water and soap are usually good enough, but if you want a *mild* bleach solution, there   are  recommendations you can find online, i use one “capful of bleach to about half of a sink full of hot water.
  • Be careful with knives, always pay attention when cutting anything, if your knife is sharpened and right for the job, it should quick and easy, and you shouldn’t have to worry about accidents too much.
  • Anything acidic is bad for your eyes, at least from a comfort standpoint. Lemon juice, pepper juice, even ketchup can make your eye sting, water and turn red, rinsing your eyes with cold water is usually enough to fix this, although in the cases of some extremely hot peppers, you might want to call a doctor to make sure that there are no potential side effects.

This is my list of pretty much anything you can do to be healthy and happy as far as kitchen safety goes, With this, i officially declare this blog started, and invite any foodies among us to join in, and dish it out.
